Maple-Mustard Glazed Salmon Recipe

Ingredients:
2 pieces of center cut Norwegian Salmon (skin off)
1 oz olive/vegetable blended oil
kosher/sea salt to taste

1/4 cup honey
1/4 cup maple syrup
2 Tbsp. Dijon mustard
2 Tbsp. Grain mustard
2 Tbsp. Gulden’s spicy brown mustard
2  tsp. molasses
salt and black pepper to taste

Maple-Mustard Glaze:
1.       Combine honey, maple syrup, Dijon mustard, grain mustard, Gulden’s spicy brown mustard, molasses together.
2.       Season with salt and pepper and set aside

Salmon Preparation:
1.       Season the salmon filets with kosher/sea salt and black pepper. 
2.       Heat a sauté pan and add an olive-vegetable oil blend
3.       As it just begins to smoke, delicately add the salmon filets flesh side down, being very careful not to burn yourself.
4.       Allow the salmon to sear before disturbing, approx. 2 minutes, then using a spatula or a pair of tongs, gently turn the salmon filets over, cook another 2-3 minutes on that side on med-high heat. 
5.       Remove the pan from heat, glaze the salmon with the maple-mustard. Glaze liberally, don’t worry if some drips off of the salmon into the pan, when you plate the dish you can pour the remaining glaze over the fish!


Lemon-Garlic Wilted Spinach

1/2 lb of fresh baby spinach
1 Tbsp. whole butter
1 tsp. chopped fresh garlic
lemon juice from one lemon
salt and pepper to taste

Directions:
1.       Heat a small sauce pot
2.       Add your whole butter and garlic
3.       Slightly toast garlic, then add the spinach, spin with tongs until wilted
4.       Salt and pepper to taste
