Taste and See South Florida went to Avocado Grill in West Palm Beach to get all the tips from Chef Adam Brown.
Ingredients
- 1 to 1/2 cup of all-purpose flour
- 1 1/2 teaspoon of baking powder
- 2 tablespoons of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 1 onion
- 5 eggs separated
- 5 Idaho Potatoes
Instructions
- Mix dry ingredients
- Grate onions on a box grater
- Beat egg whites till stiff peaks
- Lightly beat egg yolks
- Shred potatoes on a box grater
- Squeeze potatoes and onions in cheesecloth to remove water
- Return to mixing bowl and add egg yolks until combined
- Stir in dry ingredients
- Fold in egg whites
- Shallow fry on flattop grill or iron skillet until golden brown on each side
