How to make crispy, golden brown, Hanukkah Latkes

WEST PALM BEACH, Fla. — A tradition for many Jewish families is making Hanukkah Potato Latkes together. But how do you make them perfectly crispy and golden brown?

Taste and See South Florida went to Avocado Grill in West Palm Beach to get all the tips from Chef Adam Brown.

Ingredients

  • 1 to 1/2 cup of all-purpose flour
  • 1 1/2 teaspoon of baking powder
  • 2 tablespoons of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of paprika
  • 1 onion
  • 5 eggs separated
  • 5 Idaho Potatoes

Instructions

  1. Mix dry ingredients
  2. Grate onions on a box grater
  3. Beat egg whites till stiff peaks
  4. Lightly beat egg yolks
  5. Shred potatoes on a box grater
  6. Squeeze potatoes and onions in cheesecloth to remove water
  7. Return to mixing bowl and add egg yolks until combined
  8. Stir in dry ingredients
  9. Fold in egg whites
  10. Shallow fry on flattop grill or iron skillet until golden brown on each side
