How to make homemade pasta without a machine

Ingredients

  • 3 cup all-purpose flour
  • 4 large eggs (or 3 small eggs)
  • 1/4 sea salt
  • Olive Oil

Instructions

Place flour onto a flat, clean surface. Crack the eggs into the center of the flour. Break the yolks of the eggs within the flour. Then bring flour from the outside into the center of the eggs. Continue this process until the flour is absorbed into the eggs. This is when it will begin to look like dough. With the palm of your hands, you will knead the dough until it appears smooth and yellow. You can add a splash of water if the dough is dry. Once the dough is in the shape of a ball, place it in plastic wrap and put into the refrigerator for about 30 min. Remove the dough from the refrigerator and cut into 4 equal pieces. Take one piece and set aside the other pieces into a clean towel so it doesn’t dry out. Then place some flour onto a clean, flat surface and roll the dough into a big and thin sheet. Try to keep it as thin as possible. Once it has been rolled, fold it over in itself all the way. Then cut the pasta into strips. The thickness of the strips will depend on the kind of pasta you are making. Dust then unroll the pasta strips. Repeat with the remaining dough. Then set the cut pasta aside and leave it out to cook with or place in the refrigerator for later.
