Julian Gibson-Serrette and his wife Yvonne have owned the gym near West Palm Beach for 11 years.

Over the years, they've built a community around the plant-based lifestyle. However, the COVID-19 pandemic made it more difficult to make ends meet.

"You never knew where your next dollar was coming from because you didn't know if you were going to be able to open your doors," Gibson-Serrette said.

When they re-opened, he said they cut down on their class sizes. Now, a popular trend called "Veganuary" is giving their plant-based business new life.

He said the pandemic has caused a lot of his new customers to re-evaluate their health choices.

"In this age ... you don't know what virus is out there. You want to keep your immune system, really well boosted. So, those types of foods that are close to the earth, we are finding that they do the job, and they do it well, and they keep you full and satisfied," Gibson-Serrette said.
